Lardy Balls!


I started off sharing with you my efforts at making lard from our Tamworth pig fat, but the experiment did not end up quite how I thought it was going to.........

Hi Vera, when my mother and I use to do this we separated the lard from the cellular material, we did the separating while the fat was hot. We used a slotted spoon to scoop out the bits we didn't want in the lard. Then a large ladle to transfer the fat to another pot to make sure the lard was clean. Hope the next rendering of the fat works better for you.

Lardy balls sounds like the kind of insult traded by teenage boys!!!

John and Denise, oh so you missed the fun of me messing about with lard!

Horst, thanks for the info. I have made lard already, using a similar method to the one that you and your mum used, but it took ages for the fat to melt, so I though I would try a shortcut, which didn't work! Ah well, back to the first method. Did this bring back memories of you and your mum making lard?

Hi Vera, every time you do something different it brings back lots of memories. Things I thought I had forgotten, like backing doughnut type of things that we fried in the lard we had separated and now used for the pastry. We called them Pigs ears, as the resembled pigs ears. This was done around Christmas time, and we also made Pomell, which was a ball of dough that was fried in the fat and then filled with Jam or Jelly. Memeories like that.
